Mint lemonade and strawberry slush

Nour Antoun

Two summer favourites in one frosty glass: Levantine mint lemonade layered over strawberry slush.

When the temperature climbs, I blend this layered drink for friends and it never fails to impress.

Blend frozen strawberries with a little sugar syrup and lime juice until slushy and spoon it into tall glasses. Then blend a big handful of mint with the juice of three lemons, three tablespoons of sugar, ice and cold water until bright green and frothy.

Pour the mint lemonade gently over the slush so the layers stay apart. Garnish with a mint sprig and a strawberry on the rim, and serve with a wide straw.

Make the strawberry slush ahead and keep it in the freezer; the lemonade is best blended just before serving.
