Chocolate Cake

A dark, moist chocolate cake that needs one bowl and no mixer.
This is the cake I bake when friends are coming over and I have less than an hour. Everything goes into one bowl, and the batter is thin enough to stir by hand.
You will need: 200 g flour, 60 g cocoa, 250 g sugar, 2 eggs, 120 ml oil, 240 ml milk, 1 tsp baking soda, a pinch of salt and 120 ml hot coffee.
Whisk the dry ingredients, add the eggs, oil and milk, then pour in the hot coffee last. Bake at 180 °C for 35 minutes, until a skewer comes out with a few moist crumbs.
Let it cool completely before you frost it. A simple ganache of equal parts cream and dark chocolate is all it needs.
