Things about grapes you didn't know

Grapes, molasses and the old ways

It takes a lot of grapes

About five kilos of grapes cook down into one kilo of molasses.

Colour comes from the skin

Almost all grape juice is clear; dark molasses gets its colour from the skins and slow cooking.

Molasses keeps for years

Well-cooked molasses needs no fridge and keeps for a year or more in a cool cupboard.

A winter breakfast

Mountain families mix molasses with tahini for a warming breakfast on cold mornings.

White earth clears the juice

A spoon of white clay settles the juice before it is cooked, the way our grandparents did it.

Raisins dry in a week

In the September sun, grapes on our rooftop racks become raisins in about seven days.

Sweet without sugar

Our molasses has no added sugar: all its sweetness comes from the grapes.

Old vines, small harvests

Our oldest vines give fewer grapes, but their fruit is the sweetest.
