You do not need a steakhouse to enjoy a great steak. A hot pan and a little butter do most of the work.

Pat a thick rib-eye dry, season generously and sear in a smoking-hot pan for three minutes per side. Add butter, crushed garlic and thyme, and baste the steak as the butter foams.

Rest for five minutes, slice against the grain and spoon the garlic butter over the top. Serve with fries or a crisp green salad.
